When you eat ramen (or anything else) from the food markets and roadside stalls of Japan and SE Asia, there’s always a flavor or two you can’t place. We lovingly call these ‘funky flavors,’ and they invariably make the dish better. Our recipes incorporate less-commonly used herbs and spices to try and capture that street taste. We think you’ll notice the difference, and maybe even catch the vibe of sitting at a little curbside table, just off a busy street swimming with motorbikes.
